Soba Noodle Salad with Peanut Butter Dressing

Serves 4

Time 20 minutes

Ingredients

2 x 200g packets of buckwheat soba noodles

2 spring onions, sliced

1 red capsicum, halved & finely sliced

1 cucumber, cut into thin batons

2 cups leftover roast or grilled chicken, shredded

1 cup bean sprouts

Handful mint, finely sliced

¼ red cabbage, finely sliced

¼ cup peanuts, roughly chopped

Dressing

¼ cup peanut butter

¼ cup tamari

½ tbsp honey

Juice of a lime

1 clove garlic, crushed

1 tsp crushed chilli paste (or to taste)

Method

For the dressing, whisk the ingredients for the dressing in a small bowl and add enough water to achieve the desired consistency. 

Bring a pan of salted water to the boil. Add the noodles and cook for a few minutes. Drain and rinse under cold water to stop the cooking process. 

Combine all the salad ingredients in a bowl, drizzle with the dressing and toss to combine. Scatter with the peanuts and serve.
