Prosciutto Wrapped Chicken, Tomato & Olive Tray Bake

Serves 4

Time 45 minutes

Ingredients

4 x 200g portions chicken breast

16 rashers, prosciutto 

1 red onion, sliced 

800g cherry tomatoes 

80g mozzarella

200g kalamata olives 

1 whole garlic bulb, halved 

½ bunch flat leaf parsley

100ml extra virgin olive oil 

Salt and pepper

Method

Preheat the oven to 180°C.

Put the onions, garlic halves and tomatoes in a shallow roasting tin. Season, add 4 tbsp of olive oil and toss together. Roast for 15 minutes. 

Turn the chicken upside down so you are inserting the knife slightly on the angle to open out the flesh, creating a little pocket for your mozzarella. Add your slice of mozzarella  Wrap each piece of chicken in 4 slices of prosciutto. Add to the roasting tray along with the olive and bake for a further 25 minutes until the prosciutto is golden and the chicken is cooked through.

Remove from the heat and garnish with your fresh parsley.
