Pasta with Burnt Butter Sauce

Serves 1-2

Time 10 minutes

Ingredients

150g unsalted butter

10-15 garlic cloves, crushed and chopped

5-6 sage leaves, ripped apart

1 bunch of parsley, coarsely chopped

1 bunch of chives, coarsely chopped

Salt and pepper

1 package of spaghetti or gnocchi

Pecorino or parmesan, grated, to serve

Method

Cook the pasta based on package instructions til the pasta is al dente.

Meanwhile, heat a pan on medium heat. Place the butter into the pan.

Once half of the butter has melted, add the garlic and sage and swirl the pan until the butter is fully melted and foaming away.

Add the parsley, chives and pasta with 1 tablespoon of pasta water. 

Season with salt and pepper. Toss or stir to combine.

Serve with grated cheese and enjoy.
