Coconut and Chia Puddings

Serves 2-4

Time 5 minutes plus refrigerating

Ingredients

2 cups coconut milk

½ tsp vanilla extract

¼ tsp ground cinnamon

1 tbsp honey

½ cup chia seeds

Strawberry slices, to serve

Shredded coconut, to serve

Method

In a large bowl whisk the coconut milk, honey, vanilla, and cinnamon. Stir through the chia seeds.

Spoon the mixture into glass jars and leave this to soak for at least 4-5 hours or overnight if possible, to thicken.

To serve – top with strawberry slices and shredded coconut.
