Baked Blueberry Doughnuts

Serves make 9 doughnuts

Time 20 minutes

Ingredients

1 cup self-raising flour

1 tsp baking powder

¼ tsp vanilla extract

¼ cup milk 

¼ cup maple syrup or honey

3 tbsp extra virgin olive oil 

A sprinkle of ground cardamom 

A sprinkle of ground cinnamon

½ cup of blueberries

Milk, to brush 

Method

Preheat the oven to 180°C and line a tray with baking paper. 

In a bowl combine the milk, vanilla, olive oil, and maple syrup. Add the baking powder, flour, cardamom and cinnamon and then combine the wet and dry ingredients. 

Next very gently mix in the blueberries – be careful not to break them!!

Gently spoon the mixture in or cut them into rounds. Brush the doughnuts with milk.

Bake for 12 minutes.

Serve warm or cold!
