Salami, Peach & Honey Crostini

Serves makes 12

Time 15 minutes

Ingredients

12 slices baguette (about 1 cm thick)

Olive oil, for brushing

12 slices salami

2 fresh peaches, thinly sliced

60g soft goat’s cheese or ricotta

2-3 tbsp honey

Fresh thyme leaves, for garnish

Freshly ground black pepper, to taste

Method

Preheat the oven to 180°C (350°F). Arrange the baguette slices on a baking sheet, brush lightly with olive oil, and toast in the oven for 8-10 minutes, or until golden and crisp. Remove from the oven and allow to cool slightly.

Spread a thin layer of goat’s cheese or ricotta onto each toasted baguette slice. Place a slice of salami on top of the cheese layer, followed by a slice of fresh peach.

Drizzle each crostini with a small amount of honey, and garnish with a few thyme leaves and a sprinkle of freshly ground black pepper.
