Nanna Sue's Chow Mein

Serves 6

Time 25 minutes

Ingredients

2 tbsp olive oil

1 tbsp sesame oil

1 large brown onion, diced

4 cloves garlic, finely chopped

2 carrots, diced

½ cabbage, finely sliced

500g beef mince

2 tbsp chicken stock powder

2 tbsp curry powder

1L hot water

250g chow mein style dried noodles

2 tbsp light soy

2 tbsp sweet soy

Salt and pepper, to taste

Fried shallots and coriander, to serve

Method

In a large frying pan or wok, cook the onion for a couple of minutes. Add the garlic and cook for a further minute. Add the beef mince and cook until brown.

Add carrot and cabbage and cook until starting to soften.

Add chicken stock powder, curry powder and hot water. Stir to combine.

Bring to a simmer, add noodles and cook, stirring occasionally for 10 minutes or until the chow mein mixture has thickened and the noodles are cooked.

Add light soy and sweet soy, and season to taste.

Serve with fried shallots and coriander.
