Rice Cooker Pilaf

Serves 4

Time 35 minutes

Ingredients

1½ cups basmati rice

3 cups chicken stock

½ cup pistachio nuts

½ cup slivered almonds

¼ cup ghee

4 cloves garlic, finely chopped

1 small onion, finely chopped

½ cup dried apricots, chopped

½ cup raisins

½ cup dried cranberries

½ tsp fennel seeds

½ tsp cinnamon

½ tsp ground cardamom

½ tsp ground cumin

Pinch of salt and pepper

10mg saffron threads, soaked in 2 tbsp water

¼ cup chopped parsley, to garnish

Method

Place all ingredients except the parsley into the rice cooker. Stir well to combine.

Close the lid and set the rice cooker to the regular cooking setting. Let the rice cooker do the work for you.

Once cooked, open the lid and gently fluff the rice with a fork. Serve in bowls or on plates and garnish with chopped parsley.
