Chicken, Chorizo & Lemon Tray Bake

Ingredients

For the Spice Mix

1 tbsp salt

1 tsp pepper

1 tsp sumac

1 tsp garlic powder

1 tsp smoked paprika

1 tsp celery seed

½ cup olive oil

Other

4 chicken marylands

2 chorizo, 2 cm sliced

1 red onion, cut into wedges

1 red capsicum, sliced

4 potatoes, cut into wedges

8 cloves of garlic

2 lemons, halved

12 sprigs thyme

For Garnish

1 cup parsley, chopped

200g feta, crumbled

Method

Preheat the oven to 180°C. For the spice mix, add all ingredients to a large high-walled oven tray or dish. Stir or whisk to combine.

Add remaining ingredients to the tray and toss well so everything is coated in the spiced oil.

Place in the oven and bake for 45-50 minutes or until the chicken is fully cooked. Remove from the oven and garnish the tray bake with parsley and crumbled feta. Serve in the middle of the dinner table and tuck in!
