Prawn and Watermelon Salad

Serves 4-6

Time 15 minutes plus marinating

Ingredients

½ watermelon 

1 cucumber, peeled and diced

⅓ cup jalapenos, diced

Juice of 1 lime

1 shallot, finely chopped

½ cup coriander, shopped

1 avocado, diced

1 heaped teaspoon of tajin seasoning (optional)

Tortilla chips for serving

8 large prawns, shell on, cut down the midline

Handful of oregano, fresh, chopped finely

2 long red chillis, chopped finely

2 garlic cloves, minced

Avocado oil 

Salt and pepper

Method

Firstly, combine the oregano, chillis and garlic cloves with avocado oil in a bowl. Place over the flesh side of the prawns and allow to marinate for up to 2 hours if possible.

Meanwhile the rind off the watermelon then dice this into 2 cm chunks. Place this and the other ingredients in a bowl – ensure everything nicely chopped so it looks glorious in the bowl. Season with good quality salt flakes and tajin then stir to ensure well combined. 

Warm a grill pan on medium heat and cook the prawns flesh side down for 3 minutes then flip and remove from heat after 1-2 minutes when cooked. 

Serve the salad with the watermelon salsa at the bottom and the large prawns arranged on top.
