Ingredients

2kg chicken wings

1 long red chilli, chopped

1 tsp crushed red pepper flakes

¼ red onion, sliced 

8 garlic cloves  

1 bunch of coriander, finely chopped 

1 bunch of spring onion, finely chopped

Juice of 2 lemon 

Salt and pepper

4 tbsp extra virgin olive oil

⅓ cup parmesan cheese

Method

Preheat the oven to 200°C and line your baking sheet with parchment paper.

In a large bowl, toss the chicken wings with 2 tablespoons of olive oil, a generous pinch of salt, juice of 1 lemon, red onion, half of the spring onion and coriander, garlic cloves, red chilli and dried chilli flakes. Line up on the baking sheet in a single layer. 

Bake for 20 minutes. Meanwhile, mix parmesan, the remaining coriander and spring onion, 2 tablespoons olive oil and salt and pepper together in a large bowl. 

Remove the wings and add them to the large bowl, toss them with the parmesan lemon sauce then bake them for an additional 5 minutes.
