Serves 1

Time 15 minutes

Ingredients

½ packet boar free bacon

1 tbsp extra virgin olive oil 

2 slices of bread, toasted 

1 tomato, sliced

1 tbsp vegan mayonnaise 

3 slices iceberg lettuce

Method

Add oil to a hot pan. Add bacon and cook for 2 minutes, using mini tongs to turn occasionally until lightly golden and crispy. Season to taste. 

Spread vegan mayonnaise over the bread, add lettuce, tomato slices, vegan bacon and the final slice of bread. Slice in half and serve.
