Tomato Goats Cheese Pasta

Serves 4 as a starter or 2 as a main

Time 15 minutes

Ingredients

2 zucchini

200g spaghetti 

1 tbsp extra virgin olive oil 

4 cloves garlic, peeled and sliced 

½ cup basil leaves picked, stalks finely sliced 

1 x 400g tin crushed tomatoes 

Pinch chilli flakes 

80g goat’s cheese 

Method

Spiral zucchini or use a vegetable peeler to finely ribbon, this will make the pasta. 

Heat a large frypan on medium heat, add extra virgin olive oil, garlic and basil stalks and saute for 2 minutes, then add crushed tomatoes, a pinch of chilli, and season with salt and pepper. 

Simmer for 10-12 minutes, then stir through the goat cheese to make a creamy sauce. 

Cook the spaghetti as per the packet directions. 

Add zucchini noodles to the dish and stir to cook for 1-2 minutes, and gently mix through the pasta. 

Divide between bowls, and tear fresh basil leaves over the top of each with another good grind of black pepper and serve.
