The Perfect Roast Chicken

Serves 2-4

Time 50 minutes

Ingredients

1 chicken

5-6 cloves garlic

A handful of parsley and chives, or herbs of your choice

¼ lemon

¼ onion

2-3 tsp herb butter (butter mixed with parsley and thyme)

Extra virgin olive oil

Salt

Method

Preheat the oven to 195°C.

Season the chicken inside with salt and pepper.

Stuff the chicken with garlic, herbs, lemon, and onion. 

Then carefully place the herb butter between the chicken breast and skin using your finger. 

Tie up the chicken with a string. Place the chicken on a baking tray, brush the chicken with olive oil and season with salt. 

Place the chicken into the oven for approximately 45 minutes. Enjoy.
