Superfood Couscous Salad

Serves 6-8

Time 20 minutes

Ingredients

2 cups wholemeal couscous
2 cups vegetable stock
½ cup kale, sliced finely
½ cup rocket
1 cup edamame beans
1 cup red grapes, cut into halves
½ cup pumpkin seeds
½ cup sunflower seeds
½ cup walnuts
½ bunch mint, chopped

Dressing
½ cup yoghurt
1 lemon, zest and juice
3 tbsp tahini paste
¼ cup water
1 tsp extra virgin olive oil
Salt
Pepper

1 tsp hemp seeds, to garnish

Method

To make the dressing, place all ingredients into a bowl and mix until you reach a smooth consistency. Set aside. 

Place couscous in a large bowl and bring stock to the boil. Pour stock over couscous and cover with cling wrap. Set aside for 10 minutes.

Remove cling wrap and use a fork to fluff couscous. Add all ingredients except hemp seeds into couscous and mix well. Season with salt and pepper.

Pour dressing over the top and garnish with hemp seeds.
