Steamed Red Curry Salmon

Serves 2

Time 20 minutes

Ingredients

2 pieces of salmon, skin off

1 purple sweet potato, cubed

1 Broccolini bunch,

2 tomatoes, chopped into wedges

1 Bunch of coriander

3 tbsp red curry paste

2 tbsp soy sauce

½ can of coconut milk

Method

Chop your Sweet Potato into small cubes, tomato into wedges, bunch of broccolini into small lengths about half a finger long.

Into a bowl, place all the chopped vegetables along with the pieces of salmon. Coat the salmon pieces with the red curry paste, including the soy sauce.

Line a pot with baking paper. Two portions of paper so you can wrap it around to close up and steam your fish. Add the vegetables at the bottom then place the salmon pieces on top.

Pour coconut milk over all the salmon and vegetables making sure the baking paper is long enough to overlap at the top where it will seal in the heat allowing steaming to occur. Pour a cup of water under the baking paper into the pot so the fish will steam.

Place the pot on the stove and turn the heat up to high for 6 minutes then turn to lower medium heat for 8 minutes. Serve with fresh chopped coriander on top and steamed rice to accompany the Red Salmon Curry.
