Spicy Chicken Avocado Oil Stir-Fry

Ingredients

For the Chicken

2 chicken breast, sliced 

Avocado oil

350g bell peppers, sliced

½ onion, sliced

¼ broccoli

1 tsp soy sauce

½ tsp chilli flakes (optional, for extra heat)

1 tbsp garlic, minced

1 tbsp ginger, minced

Browned rice, to serve

Salt and pepper

For the Dressing

⅓ cup avocado oil

2 tbsp fresh orange juice

1 tbsp fresh lime or lemon juice

1 tbsp soy sauce

1 tsp honey or agave syrup (adjust to taste)

1 tsp freshly grated ginger

1 small garlic clove, minced

Salt and pepper, to taste

Method

For the chicken, heat avocado oil in a wok or large frying pan over high heat. Add the minced garlic and ginger, stir-frying quickly until fragrant. Add the chicken slices, seasoning with salt, pepper, and chilli flakes. Cook until the chicken is browned and nearly cooked through. Add the chilli flakes, if using. 

Toss in the bell peppers, onions, and broccoli, stir-frying until the vegetables are tender but still crisp. Finish by adding soy sauce and stir well to combine all ingredients. Cook for another minute or two.

For the Dressing, in a small bowl, whisk together the orange juice, lime or lemon juice, soy sauce, honey or agave syrup, grated ginger, and minced garlic until well combined. Slowly drizzle in the avocado oil while continuously whisking. This helps to emulsify the dressing, blending the oil smoothly with the acidic components.

Season with salt and pepper to your taste. Adjust the flavours as needed – you might want more sweetness, acidity, or heat.

Let the dressing sit for at least 10 minutes to allow the flavors to meld together. Give it a quick whisk before serving. Drizzle over your spicy avocado oil chicken stir-fry just before serving, or serve it on the side as a dipping sauce.
