Sicilian Pasta

Serves 4

Time 15 minutes

Ingredients

500g linguine

150g chorizo, sliced

150g guanciale, diced

¼ cup extra virgin olive oil

½ large eggplant, diced 

½ red onion, sliced 

3 anchovies

1 long red chili, diced 

1 tbsp dried chili flakes

1 tsp capers

4 garlic cloves, diced

400g tomatoes, diced

1 handful of fresh basil, roughly diced 

1 bunch of fresh parsley, roughly diced

100g parmesan cheese, grated

Method

Cook pasta in salted boiling water as per packet instructions.

Heat the oil in a pan and add the guanciale and chorizo until the fat renders. Add the eggplant, onion, garlic, red chili, chili flakes, anchovies, cook for a few minutes.

The eggplant and onion will soften, and start to caramelize

Add the capers and tomatoes, simmer.

Add the pasta, 1 tablespoon of pasta water and herbs and toss through. 

Season with salt and pepper. Serve with grated cheese.
