Serves 6-8

Time 15 minutes

Ingredients

500g unsalted butter, softened 

4 roast whole garlic heads

1 tsp dried chilli flakes

1 tbsp chives, finely chopped

Zest of 1 lemon

Salt and pepper

Green olives

Pickles, chopped

Pickled onions, chopped 

Parsley

Basil

Rosemary

Prosciutto or ham of your choice

Bread or cracker of your choice

Method

Add softened butter, garlic, chilli, chives, lemon zest, a pinch of salt and pepper to a bowl. 

Mix to combine. 

Spread the butter mixture over a board and top with olives, pickles, pickled onion and picked herbs. 

Serve with ham, some extra olives and bread or crackers.
