Sambal Green Beans with Chilli & Pork

Serves 4

Time 15 minutes

Ingredients

400g snake beans, cut into long pieces

½ red onion, sliced

3 lap cheong sausage, sliced

1 red chilli, sliced

2 cloves garlic, sliced

1 knob ginger, sliced

200g pork mince

200g tofu

1 bunch of spring onion, chopped

1 bunch of coriander, chopped

A pinch of white sesame seeds

Extra virgin olive oil

Salt

Sauce

1½ tsp sugar

2 tbsp sambal oelek

2 tsp shrimp paste

1 tsp sesame oil

1 tbsp soy sauce

1 tbsp dried chilli flakes

Method

Place all sauce ingredients in a bowl.

Mix to combine and set aside.

Heat a pan over medium-high heat.

Add the beans with a splash of olive oil.

Fry until the skin blisters.

Add the onion, lap choeng sausage, ginger, chilli, garlic and sauté.

Crumble the pork and add it in, then add the tofu.

Toss to combine and sauté for 3-4 minutes or until the pork is cooked through.

Add the coriander and spring onions and drizzle with sauce. Toss to combine.

Top with sesame seeds and serve.
