Salmon & Wholegrain Rice Sushi Tower

Serves 2-4

Ingredients

1 cup cooked wholegrain basmati rice

2 tbsp rice wine vinegar

2 fillets of sashimi grade salmon – finely diced

2 tsp sesame oil

2 tbsp tamari or gluten-free soy sauce

2 tbsp chives, chopped

1 avocado, sliced thinly

1 cucumber, very thinly sliced

Radish, thinly sliced

¼ cup Kewpie mayonnaise

2 tbsp sriracha (leave out for kids)

Black sesame seeds

Furikake seasoning

Method

In a bowl combine the salmon with sesame oil, chives, rice vinegar and gluten-free soy sauce, mix to ensure all are combined.

In another bowl mix the sriracha and Kewpie mayo – this is your sauce for later

Use a baking circle (or egg circle) and firmly press rice at the bottom, then layer the thinly sliced cucumber, radish then avocado, and then salmon on top.

Sprinkle black sesame seeds and furikake seasoning over the top after removing the baking circle.

You can either dollop some sauce on top or place this on the side for some awesomeness.
