Roti Lamb & Hummus Taco

Serves 1

Time 5 minutes

Ingredients

1 wholemeal roti

Leftover lamb roast or grilled lamb backstrap

2 tbsp hummus 

¼ red onion, finely sliced

4 cherry tomatoes, halved

Handful of cucumber batons

Handful of sprouts

A few mint leaves

1 tbsp tzatziki

Method

Heat a frying pan and warm the roti on both sides for 30 seconds or so. Remove from the pan. Add the lamb to the pan to heat through for a minute or so.

Spread hummus in a strip down the middle of the roti. Layer the red onion, tomatoes and cucumber.

Add the lamb and scatter with sprouts and mint leaves. Drizzle with tzatziki. Wrap and eat straight away.
