Roasted Cauliflower Pasta Bake

Serves 5

Time 25 minutes

Ingredients

500g penne

1 cauliflower, cut into bite-size pieces

4 sprigs thyme

2 garlic cloves, sliced

½ cup extra virgin olive oil

2 tbsp chilli flakes

1 tin cherry tomatoes

1 cup mozzarella, grated

½ cup parmesan

1 cup sour cream

1 cup coarse breadcrumbs

Salt and pepper

Method

Preheat oven to 220°C.

Mix cauliflower, thyme, garlic, chilli, olive oil in a bowl. Place into a baking tray and cook for 20 minutes or until cauliflower is golden.

Remove baking tray from oven, add cherry tomatoes and mix together. Cook for a further 5 minutes.

In a pot of boiling salted water, cook pasta per packet directions. Drain. 

Mix pasta with cauliflower and adding mozzarella, parmesan and sour cream.

Place bake into baking tray and scatter breadcrumbs over top. Bake for 10 minutes or until golden brown.

Serve and enjoy with family and friends!
