Preeya's Spicy Okra

Serves 4

Time 15 minutes

Ingredients

500g okra, cut into rounds 

4 tbsp extra virgin olive oil (bit more than normal)

2 long red chillies, deseeded and chopped

1 tsp mustard seeds

2 stems of curry leaves

1 red onion, chopped

1 tbsp ginger, finely chopped or minced

4 garlic cloves, finely chopped or minced

Roti, to serve 

Method

Heat olive oil in a fry pan.

Add the mustard seeds and curry leaves, stir until fragrant for 1-2 minutes. Then add onion and ensure softens and browned. Add the ginger and garlic and stir.

Add the okra and stir. Then add chillies and stir – do not stir the dish too much.

Ideally watch over this and combine it occasionally – it is quite gluey in consistency and if it starts touching on the bottom ensure stirred to prevent burning but you do want a bit of a toasty feel to some of the bits.

Serve with roti so it can be wrapped.
