Prawn Money Bags

Serves 2-4

Time 20 minutes

Ingredients

200g prawn meat, unfrozen and roughly chopped

100g water chestnuts, roughly chopped

3 garlic cloves, minced

4 shitake mushrooms, diced

½ carrot, finely diced or grated

2 tbsp light soy sauce

1 tsp fish sauce

White pepper

Freshly cracked black pepper

Wonton wrappers

Vegetable oil, for frying – sunflower or canola

Sweet chilli sauce, for dipping

Method

In a bowl, combine chopped prawn, water chestnuts, garlic, mushrooms, carrot, soy sauce and fish sauce. Ensure the ingredients are well combined – also season with white pepper and black pepper.

Place a heaped teaspoon of the mixture in the middle of a wonton wrapper, then bring the edges up to make a money bag. Repeat and prepare all the money bags.

In a pot prepare boiling water and steaming baskets and steam the money bags for 12-15 minutes until prawn is cooked.

For the fried option – ensure you safely heat the vegetable oil using a thermometer if possible – fry the money bags for 4-5 minutes then remove from oil safely.

Serve with chilli sauce.
