Pork & Prawn Wontons with Chilli Oil

Serves 4

Time 45 minutes

Ingredients

100g pork mince – lean 

100g prawn meat – shelled and chopped finely

1 carrot, grated

2 spring onions – white portion sliced

2 tbsp ginger, minced

2 tbsp soy sauce

½ tsp sesame oil 

1 tbsp mirin

Sprinkle of white pepper 

1 packet of wonton wrappers

Chilli Oil

2 tbsp chilli oil 

2 tbsp soy sauce

1 tbsp black vinegar


To Serve

Sesame seeds

Chopped coriander

Chopped chilli

Method

In a bowl combine the mince, prawn meat, carrot, spring onion, ginger, soy sauce, mirin, white pepper and sesame oil. Combine well. 

Grab a wonton wrapper – place a heaped teaspoon of mixture in the centre and wet fingers with water and gently bring the edges up to make a parcel – or you can fold into a triangle then pinch in the edges.

Make all the wontons and ensure you place them on a lined tray, so they do not stick.

Bring a large pot of water to boil and add the wontons. Ensure you stir the water, so they don’t stick.

Allow them to cook for 6 minutes – check before serving by cutting one in half if needed. When done thoroughly drain the wontons.

Whilst the wontons are cooking – stir all the ingredients for the chilli oil together.

Place the wontons in a bowl and combine with the spicy chilli oil. Top with chopped coriander, freshly chopped chilli, and some sesame seeds.
