Peanut Butter Fudge

Serves 24-30

Time 15 minutes plus freezing

Ingredients

½ cup coconut sugar 

¼ cup water 

1 cup smooth peanut butter 

1 tbsp vanilla extract 

⅓ cup melted coconut oil 

Pinch of salt, to garnish

Method

Place coconut sugar and water in a saucepan, place on medium heat for 5-6 minutes until sugar is dissolved and the syrup is slightly thickened. 

Add peanut butter, vanilla, melted coconut oil and sugar syrup to a food processor or high-speed blender and pulse until smooth and creamy. 

Pour into a lined loaf tin, sprinkle a little salt on top and place in the freezer to set for 2-4 hours. 

Slice and serve directly from the freezer.
