Peanut Butter, Bacon and Banana Bagel

Serves  makes 2 bagels

Time 10 minutes

Ingredients

2 bagels, halved

200g streaky bacon

25g butter

1 large banana, sliced into 1 cm slices

¼ cup maple syrup

¼ cup smooth or smoochy peanut cutter

Method

Toast bagels in a toaster or fry pan. Set aside.

Cook bacon in a frying pan over medium heat until crispy. Add half the maple syrup to the pan for a minute or two before removing to make maple bacon. Remove onto a plate lined with paper towel to drain.

Wipe out the pan and put back on to low-medium heat. Add butter to the pan. Once melted, add banana slices and cook for 2 minutes on one side before turning. After turning, add the remaining maple syrup and cook for a further 2-3 minutes until the banana is caramelised. Remove and set aside.

To build your bagels, spread peanut butter onto the bottom half and top with banana and bacon. Place the lid on top and enjoy.
