Peanut & Sesame Bars

Serves 10-12

Time 30 minutes plus cooling

Ingredients

1 cup white sesame seeds

1 cup black sesame seeds

¾ cup shredded coconut

¼ cup roasted peanuts – chopped roughly

½ tsp salt flakes

¼ cup honey

2.5 tbsp peanut butter – smooth

¼ tsp vanilla extract

Method

Preheat oven to 180°C.

In a bowl combine the sesame seeds, peanuts, coconut, and salt. Add the honey, peanut butter, and vanilla, stir to combine and ensure the nuts and seeds are well coated. 

Place this mixture into a baking tray lined with baking paper. Ensure flattened and even. Bake for 20-25 minutes until golden.  

Allow to cool on a wire rack and leave for 45 minutes.

Cut into bars when cool and not at all warm.
