Olive Oil & Honey Baklava

Serves 10-12

Ingredients

¾ cup monk fruit classic sugar 

1 cup honey

1 cup water

1 tsp whole cloves

¼ cup orange blossom water

120g roast almonds

120g pistachios

120g walnuts 

1 tbsp cinnamon

½ whole nutmeg, grated 

1 packet filo

¼ cup extra virgin olive oil 

Method

In a small saucepan combine the sugar monk mix, honey, water, cloves and orange blossom water. Bring to a boil, then reduce the heat to a simmer and simmer for 25 minutes. Turn off the heat and allow to cool. Remove the cloves and discard.

Preheat the oven to 180°C. 

Pulse the nuts in a blender or food processor until roughly chopped and combine with the cinnamon and nutmeg. 

Brush a baking tray, roughly the size of the filo sheets, with oil and place one layer of pastry. Brush with oil and repeat with a third of the sheets. 

Scatter with half of the nuts mix and continue with the filo layers, brushing with the oil between layers. After another third of the filo scatter the remaining nuts and layer with the remaining pastry sheets. 

Slice the baklava with a small sharp knife in a diagonal pattern. 

Bake in the oven for 30-35 minutes until golden brown. Remove from the oven and pour over the cooled syrup mixture. Set aside for at least 1 hour to cool and set completely. Store in the fridge.
