Nut Bars

Serves 12

Time 1 hour

Ingredients

1 cup oats

½ cup chopped walnuts

½ cup coarsely chopped pecans

½ cup chopped brazil nuts

¼ cup sunflower seeds

½ cup dates, roughly chopped

3 tbsp baking blend 

1 tsp cinnamon ground

3 tbsp coconut oil

Method

Preheat oven to 180 degrees. Line a baking pan with baking paper. 

Place the walnuts, pecans and brazil nuts on the baking paper and place in the oven for 10 minutes to toast the nuts slightly – it’s more delicious! Allow to cool before roughly chopping. 

Add all of the ingredients to a large bowl, and combine well. 

Pour the mixture back into the lined baking pan and ensure it is smooth and packed very tightly together – flatten down with a spatula. 

Bake for 40 minutes. 

Allow to cool then cut into bars.
