Noodle Salad

Serves 6-8

Time 20 minutes

Ingredients

1 packet Chinese wheat noodles, cooked
1 cucumber, seeds removed sliced
1 handful sugar snaps, sliced
1 bunch coriander, chopped
1 red chilli, sliced
1 green chilli, sliced
½ red onion, sliced
1 ½ capsicums, assorted colours, diced
1 bunch mint, leaves picked
2 tbsp sesame seeds
¼ cup deep fried shallots
1 bunch spring onions
1 bunch snow pea shoots
1 bunch watercress

Dressing
2 cloves garlic, microplaned
1 knob ginger, microplaned
1 tbsp Thai Chilli Jam
1 Lime
2 kaffir lime leaves, finely chopped
¼ cup light soy
1 tsp vinegar
1 tbsp coconut sugar
1 tbsp mirin
1 stem curry leaves
½ cup extra virgin olive oil

Method

Combine all of the ingredients for your dressing in a bowl.
Place cooked noodles on a plate, spoon some of the dressing over the noodles and stir though. Layer all of your other ingredients over the noodles and pour over the remaining dressing to serve.
