Mushroom and Cannellini Bean Bruschetta

Serves 1-2

Time 15 minutes

Ingredients

11-12 button mushrooms

Handful of thyme

2 x cans of 400g cannellini beans, rinsed and drained

Juice of ½ lemon

1 garlic clove, minced

Bread – baguette or crostini – whatever you have, cut into slices

Extra virgin olive oil

Salt and pepper

Method

Place the bread of your choice in the oven to get slightly golden for 4-5 minutes.

Heat olive oil in a pan and add the mushrooms and thyme. Cook for 4-5 minutes or until the mushroom is softened and golden.

Meanwhile, in a bowl combine the cannellini beans, lemon juice and minced garlic. Smash the beans until it forms a paste. 

To make the bruschetta – take your toasted bread, spread the cannellini bean paste and top with mushrooms and thyme.
