Maple Cashew Fudge

Serves 16

Time 15 minutes + setting time

Ingredients

¾ cup cashew butter

½ cup maple flavoured syrup sweetened with monk fruit

2 tbsp olive oil 

Sea salt flakes, to top

Method

Place all the ingredients in a food processor and blitz until smooth. 

Place baking tin, lined with cling film. 

Place the tray in the freezer for 2 hours or until set. 

Sprinkle with some salt flakes to serve and cut. Serve chilled. Store in an airtight container in the freezer.
