Lemongrass Chicken Thighs

Serves 4-6

Time 15 minutes plus marinading

Ingredients

6 chicken thighs - skin off

4 tbsp avocado oil 

4 tbsp lemongrass, chopped

2 tbsp lemon juice

2 tsp honey

3 garlic cloves, minced

3 tbsp soy sauce, tamari if gluten-free version 

2 tsp fish sauce

Method

In a bowl combine the avocado oil, lemongrass, soy sauce, lemon juice, honey, garlic, and fish sauce, stir to combine. 

Place chicken in the bowl and ensure well coated in marinade. 

Leave this in the fridge for 1 hour to marinate, or even overnight. 

Preheat a grill pan to medium heat. Place the chicken thighs on the grill, remove excess marinade. 

Cook for 3-4 minutes on each side until cooked through. 

Serve.
