Fillet Steak with Coffee Gravy

Serves  4

Time 15 minutes

Ingredients

4 x 200g fillet steaks

1 tbsp extra virgin olive oil

1 tsp salt flakes

¼ cup red wine

2 shots coffee (can use decaf in the evening)

½ tbsp pomegranate molasses (or honey)

1 tsp cornflour

1 tbsp cream cheese

Salt and freshly ground black pepper, for season 

Method

Preheat oven to 140°C.

Bring steaks to room temperature. Drizzle with extra virgin olive oil and season with salt and pepper on both sides. 

Heat a frying pan and cook the steaks for 2-3 minutes one each side depending on how well done you like your meat. Transfer to a plate and pop in the oven to finish cooking to your liking. Depending on the thickness of the steaks 5-10 minutes is the approximate time for medium rare steaks. Remove the steaks from the oven and cover with foil to rest until ready to serve. 

Deglaze the pan with the red wine and then add the coffee and pomegranate molasses. 

Stir the cornflour into a little water to make a paste and add to the pan. Stir continuously and simmer until thickened and the flour is cooked out. 

Add the cream cheese and season to taste. 

Serve the steak with the coffee gravy on the side, with boiled or roast potatoes and a gorgeous mixed salad.
