Dark Chocolate Chip & Raspberry Muffins

Serves make 12 muffins

Time 30 minutes

Ingredients

350g plain flour

2 tsp baking powder

200g brown sugar

2 eggs, lightly beaten

100g Greek yoghurt

250ml warm water

250g butter, melted

225g raspberries

200g dark chocolate chips

1 tsp vanilla essence or vanilla extract

Raw sugar, to sprinkle

Icing sugar, to serve

Method

Preheat the oven to 180°C. Line a muffin tray with paper baking cups.

Place the plain flour, baking powder and sugar in a bowl. Mix to combine, then add the warm water, egg, butter, yoghurt and vanilla and whisk until everything is combined and there are no lumps.

Gently fold the raspberries and chocolate chips. 

Pour the batter into the tray until it is ⅔ height for each cup. 

Sprinkle it with sugar.

Bake for 25-30 minutes or until it’s cooked through.

Sprinkle with icing sugar and serve.
