Creamy Cheddar Beer Cheese Dip

Serves 6-8

Time 30 minutes

Ingredients

125g salted butter 

6 cloves garlic, sliced

½ brown onion, diced

3 tbsp plain flour 

500ml beer

500g cheddar cheese, shredded 

250g cream cheese

1 tsp Dijon mustard 

1 tsp cayenne pepper

1 tsp white pepper

1 bunch of chives, finely chopped

1 bunch of parsley, finely chopped

Salt and pepper, to taste

Method

Add butter to a pan on medium heat. Once it has begun to melt, add the garlic and onion with a pinch of salt and cook until onions are translucent. Add the flour and the beer and stir around.

Add all but ½ cup of the white cheddar cheese and cream cheese to the same pan over medium-low heat. Cook until melted and smooth.

Whisk in the white pepper, cayenne, Dijon mustard until evenly blended and smooth, stirring almost constantly to prevent it from burning on the bottom. Add the herbs and mix together.

Take a portion of the dip and transfer it into a bowl and serve with crackers.
