Cinnamon Proper Porridge with Yoghurt, Berries & Hemp

Serves 4

Time 15 minutes plus soaking overnight

Ingredients

1 cup steel cut oats (or rolled oats & then you don’t need to soak overnight but groats do make an awesome porridge!)

1 cup milk

2 tsp ground cinnamon 

1 cup Greek yoghurt

1 cup blueberries

8 strawberries

2 tbsp hemp hearts/seeds

2 tbsp almonds

Pinch of salt

Method

The night before put the oats in a saucepan and cover with water. Cover with a lid and leave to soak overnight. 

In the morning, drain and cover with fresh water just to cover. Add the cinnamon and bring to a simmer. Once the water is almost all absorbed add the milk and pinch of salt, continue to simmer until almost completely absorbed and the porridge is thick and creamy. If it gets too thick add a little more water or milk to achieve the desired consistency. 

Meanwhile, heat a small frying pan and toast the almonds, tossing frequently and taking care not to let the nuts burn. Remove from the heat and chop roughly with a large sharp knife. 

Distribute the porridge between bowls and top with the yoghurt, berries, hemp and chopped almonds.
