Chunky Avocado & Fetta Dip

Serves 4-6

Time 5 minutes

Ingredients

2 avocados

100g traditional fetta 

Juice of ½ lemon 

½ red capsicum, diced small

1 small Lebanese cucumber, diced small

½ stalk celery, diced small

Handful of coriander, leaves picked and chopped

Salt & black pepper to taste

Method

Roughly mash the avocadoes with a fork, leaving the texture quite chunky. 

Crumble in the feta and add all the other ingredients. Mix to combine and season to taste, adding more lemon juice, salt or pepper as required. 

Serve with brown rice crackers or wholemeal flatbread crisped in the oven.
