Chocolate and Orange Jamaretti

Serves 4-5

Ingredients

180g almond meal, roasted

125g raw caster sugar

1 egg white

70ml milk 

100g 70% Lindt EXCELLENCE 70% Cocoa

40g 70% Lindt EXCELLENCE 70% Cocoa, chopped

3-4 tbsp orange marmalade or preserve of your choice

 

Optional 

Melted Chocolate and chopped roasted almonds or pistachio

Gold Dust

Method

Preheat the oven to 180C. 

In a mixing bowl combine the almond meal and the sugar.

In a saucepan, warm up the milk to just under boiling point and then remove from the heat.

Add the chocolate and allow to sit for a couple of minutes.

Gently stir the chocolate mixture to create a smooth, glossy chocolate sauce. Set aside to cool slightly. 

Add the egg white and the slightly cooled chocolate mixture and combine. Lastly, fold in the chopped chocolate chunks.

Line a tray with baking paper and either using a piping bag or by spooning on the mixture, shape logs around 3-4 cm wide (it will spread slightly in the oven). 

Bake at 180°C for around 8 minutes.

Take out of the oven and gently, using the back of a kitchen knife or a kitchen spoon, push and shape a ‘channel’ in the middle of each log.

Fill the cavity with a little jam and return to the oven for another 6 – 8 minutes or until the outside feels a little firm.

Remove and allow to cool.

Drizzle with little extra chocolate and sprinkle with a few nuts and some gold dust.
