Broccolini Stir Fry with Shredded Pork

Serves 4

Time 15 minutes

Ingredients

Extra virgin olive oil

½ red onion, sliced

1 long red chilli, chopped

1 green chilli, chopped

4 garlic cloves, sliced

1 knob of ginger, cut into julienne

1 bunch of broccolini, halved

1 bunch of purple broccolini, halved

4 shiitake mushrooms, sliced

A handful of oyster mushrooms, tear apart

200g pork, cut into strips

2 tbsp crispy chilli oil

2 tsp light soy sauce

2 tsp red wine vinegar

1 bunch of coriander, roughly chopped

1 bunch of spring onions, roughly chopped

100g tofu, cut into cubes

Salt and pepper

Method

In a bowl, add the pork, chilli oil, light soy and red wine vinegar. 

Mix to combine, marinade for 10-20 minutes.

Heat a pan on medium-high heat. 

Add the red onion, chillies, garlic and ginger with a splash of olive oil. 

Cook for 30 seconds to 1 minute until the onion starts to become translucent. 

Add the broccolini, purple broccolini, oyster mushrooms and shitake mushrooms. 

Season with salt and pepper and stir to fry for 2-3 minutes. 

Push the vegetables aside and add the marinade pork.

Toss to combine. 

Continue stir-frying until the pork is cooked through. 

Add the coriander, spring onions and tofu. 

Toss to combine. 

Serve immediately.
