Berry Cheesecake Stack

Serves 6

Time 30 minutes

Ingredients

3 sheets of puff pastry 

1 punnet of strawberries, sliced

2 punnets of raspberries

Juice of 1 orange

¼ cup caster sugar

1 tsp vanilla bean paste

200g cream cheese, softened and chopped into small pieces so it can be whipped

500ml cream, whipped

Icing sugar, for dusting

Method

Preheat the oven to 200°C.

Line baking trays with baking paper and place the puff pastry sheets on a tray, bake for 10 minutes until puffed, turn over and bake for another 3 minutes then cool.

Place the berries in a bowl with orange juice, vanilla bean paste and sugar, mix to combine and set aside for 10-15 minutes.

In a bowl whisk the cream cheese and cream in a bowl.

To serve – place the first sheet on a large serving dish.

Smooth out the cream cheese mixture and top with the berry mix along with some of the juice as well – not too much!

Do another layer of pastry and repeat with cream cheese and fruit.

For the top later dust some icing sugar.
