Wagon Wheels
Serves 6-8

Ingredients
8 small pistachio flavoured biscuits
4 tsp raspberry jam (or your preferred jam)
4 marshmallows (flattened with rolling pin)
200g dark or milk chocolate, chopped
1 tsp olive oil

Method
Lay 4 biscuits flat-side up and spread each with a teaspoon of raspberry jam. Place a flattened marshmallow over the jam, then top with the remaining biscuits to create sandwiches. Press gently to secure.
Melt the chocolate in a heatproof bowl set over a saucepan of gently simmering water (or in short microwave bursts). Stir in the oil if using - this helps create a smoother, thinner coating.
Dip each wagon wheel into the melted chocolate using forks, ensuring they’re fully coated. Place on a tray lined with baking paper, sprinkle with salt, and refrigerate for 15-20 minutes until set.
