Strawberry Radicchio Honeycomb & Mozzarella Salad

Serves 4

Time 15 minutes

Ingredients

½ head (red) radicchio 

500g strawberries, thinly sliced 

2 x 110g fresh mozzarella balls

¼ cup (45g) pickled red onion, finely sliced 

½ cup fresh basil leaves 

3 tbsp pistachios, roughly chopped 

Sea salt and black pepper

1 piece honeycomb

Dressing

¼ cup extra virgin olive oil 

1 tbsp white wine vinegar 

1 tbsp honey 

Method

Whisk together all ingredients for the dressing, season with salt and pepper and set aside. 

Arrange the radicchio leaves on a serving platter. Add half the strawberries to the cups of the leaves and around the platter, then pull the mozzarella into generous chunks and arrange over the strawberries. 

Arrange the pickled red onion around these ingredients and layer with the remaining strawberry slices. Tear basil leaves around the platter and season with salt and pepper. 

Drizzle over the dressing, sprinkle with pistachios and finish by placing scoops of honeycomb around the salad. Enjoy!
