Speculoos Slice

Time 10 minutes plus setting time
Ingredients
250g cashew biscuits
250g roasted cashews
125g butter
400g speculoos spread
250g milk chocolate (for melting)
Method
Grease and line a slice tin, leaving the sides of the baking paper longer so it’s easy to lift the slice out once set.
Place the cashews and biscuits in a food processor and blitz to a crumb.
Melt the butter and speculoos spread together in a saucepan or microwave. Add to crushed biscuits and cashews. Stir to combine.
Spread the mixture evenly into the slice tin.
Melt the chocolate in the microwave or in a bowl over simmering water. Pour the melted chocolate over the slice and spread out evenly.
Place in the fridge for at least 2 hours to set. Slice and enjoy!
