Ingredients

300g cooked, peeled shrimp

½ tsp finely chopped red onion 

½-1tsp finely grated horseradish 

1 tbsp lemon juice 

2-3 tsp dill, finely chopped, plus extra sprigs to serve 

80-100ml good-quality mayonnaise 

2 thin slices of white sourdough bread

Sea salt and freshly ground black pepper, to taste

1 tbsp fish roe, to serve  

To Serve: Finely sliced radish, lemon wedges and a wedge of iceberg lettuce

Method

Finely chop the shrimp and add to a bowl with red onion, horseradish, lemon juice, dill and mayonnaise. Season with salt and pepper and toss. 

Toast the sourdough. Top with shrimp combination. Add a small spoonful of fish roe and garnish with dill sprigs. Serve with finely sliced radish, lemon wedge and a wedge of lettuce.
