Roti Pizza Rolls

Serves 2

Time 15 minutes

Ingredients

2 frozen phulka rotis

2-3 tbsp passata

½ tsp dried oregano

½ small red onion, finely sliced

½ cup baby spinach, chopped

6 cherry tomatoes, halved

2 tbsp black olives, sliced

Small handful of basil leaves

1 buffalo mozzarella ball

Method

Heat each roti in a dry pan for 30-40 seconds on each side until soft and pliable.

Spread each roti with a thin layer of passata and sprinkle with oregano. Top with red onion, spinach, tomatoes, olives, basil and tear over the cheese.

Roll each roti tightly into a log - like a wrap.

Pan-fry over medium heat for 2-3 minutes each side until golden, sealed, and the cheese melts. Or air fry 5-6 mins at 180°C.

Cut into pinwheels or enjoy whole as a handheld roll.
