Pulled Chicken Tacos

Ingredients
For the Pulled Chicken
2 tbsp olive oil
500g boneless, skinless chicken thighs
1 onion, finely chopped
2 garlic cloves, chopped
1 tsp smoked paprika
1 tsp ground cumin
½ tsp chilli powder (optional)
400g canned chopped tomatoes
2 tbsp tomato paste
1 tbsp apple cider vinegar
1 tbsp honey
Sea salt and black pepper, to taste
For the Tacos
8 small soft tortillas
150g smoked cheddar
Fresh coriander leaves, for garnish
Lime wedges, to serve
Method
Heat the olive oil in a large pan over medium heat. Add the chicken thighs and sear on both sides until golden, about 4 minutes per side. Remove and set aside.
In the same pan, sauté the onion and garlic until softened, about 3 minutes. Add smoked paprika, cumin, and chilli powder, cooking for 1 minute until fragrant.
Stir in the chopped tomatoes, tomato paste, apple cider vinegar, and honey. Season with salt and pepper. Return the chicken to the pan, cover, and simmer on low heat for 20-25 minutes, or until the chicken is tender and cooked through.
Remove the chicken and shred using two forks. Return the shredded chicken to the sauce, stirring to coat.
Place a spoonful pulled chicken into the tortillas, top with grated cheddar, fresh coriander and serve with lime wedges.
