Protein Rich Peanut Butter French Toast

Serves 1

Time 20 minutes

Ingredients

1 egg 

1 egg white 

2 tbsp milk 

½ tsp vanilla extract 

Good pinch cinnamon 

1 tbsp smooth peanut butter 

1 banana 

2 slices sourdough bread 

Butter, for frying 

Berry Chia Smash

½ cup frozen blueberries, defrosted 

2 tsp white chia seeds 

Maple syrup 

Method

Make the berry chia smash by adding frozen and defrosted blueberries (with the liquid) to a bowl. Smash the blueberries, then add the white chia seeds and a dash of maple syrup and mix to combine. This needs to set for about 10 minutes, so it’s best to make this first. 

Whilst the chia smash soaks, make the French toast. Whisk egg, egg white, milk, vanilla and cinnamon in a shallow bowl. Mash the banana onto one side of the sourdough bread and spread peanut butter on the other slice, sandwich together then soak in the egg and milk mixture, flipping to ensure both sides are soaked and coated. 

Heat the frypan on medium heat, add some butter to coat the pan, then add the soaked sandwich to the pan and cook 3-4 minutes each side or until golden and a touch crispy. 

Transfer to a plate and top with berry chia smash, and a bit of extra peanut butter if desired, then tuck in.
